Outlaw Restaurant

Outlaw Restaurant

The oldest operating restaurant in Ouray, the Outlaw Restaurant was started in 1969 by George Verges, previously it was named the Pick Café.  George Verges sold the restaurant to Paul and Lois Klein in 1972 and they continued to run the Outlaw until their deaths, Paul in 1987 and Lois in 1988.  At this time Christina Bonatti bought the Outlaw and became the proprietor.  The Outlaw building was bought in 1937 by Chris’s grandfather Joe Bonatti, an Italian immigrant.  The Outlaw building has been passed down through the Bonatti family and is still owned by Chris today.  The Outlaw is an eclectic steakhouse that has been mentioned in multiple magazines and newspapers for its charm and character.  In 1968 when John Wayne was filming True Grit in Ridgway he ate at the Outlaw and left his hat with Chris’s mom Addie, who was behind the bar at the time.  Chris owned and operated the Outlaw until April of 2009 when she sold the restaurant to Paul and Alison Choate.  Paul worked at the Outlaw restaurant the summer of 2001 and even then there was discussion of him one day owning the Outlaw Restaurant.  Paul and Alison are proud to carry on the Outlaw Tradition.
